French Green Lentils are stunning blue-green mottled seeds reminiscent of round stones polished smooth by mountain streams. Given their smooth texture, spicy flavor notes, and ability to hold their shape when cooked, it’s no wonder that this variety has been the lentil-of-choice for gourmet European and American chefs.
Traditionally grown in le Puy region of south central France, these French Green Lentils are exceptionally well suited to Montana, where its cool, dry environment accentuates their beauty and flavor.
Our French Green Lentils cook in 20-25 minutes and are recommended for exquisite soups, or in cold or warm salads. Make enough for leftovers, because these lentils hold up well for days.
